Those are moments I prefer. 




My favorite moments are when I cook

And rather than telling you,

Why don’t you take a look:

Taco soup.
Green salad.
Birria tacos.
Spinach dip and tortilla chips.
Peach cobbler.
Poblano pasta with topped with steak.
Balsamic vinegar and onion roasted carrots.
Grilled chicken salads.
Cinnamon rolls with cream cheese icing & pecans.
Boiled crawfish with all the fixings: corn, smoke sausage, and red potatoes.
Banana pudding.
New York strip steak dinner.
Chicken and buttered pecan waffles.
Loaded nachos.
Boiled shrimp with all the fixings: corn, smoke sausage, and red potatoes.

My name is Erykah Gray, but most people know me as Miss Gray. I hail from the charming town of Centreville in Southern Mississippi. I earned my Bachelor’s degree in English from The University of Southern Mississippi in Hattiesburg and a Master of Arts in Literature from Liberty University in Lynchburg, Virginia. Today, I’m a proud doctoral student at the University of Louisiana at Monroe, because I believe that learning is a lifelong journey—and I’m passionate about being on that path. Teaching isn’t just what I do; it’s who I am. I love speaking, writing, and inspiring others to find their voice. Every day in my classroom, I strive to make learning exciting and meaningful while helping my students grow into confident, inspired thinkers ready to take on the world. Here, I plan to do the same.

        No problem! Wow! What a small world! I’m familiar with all of these areas. I have family out east, in Gretna, and Avondale. I enjoy New Orleans and visit every chance I can. It’s a second home for me.

    Oh, all looks delicious. Reminds me of my time spent in New Orleans. My Mom was brought up in Monroe, Louisiana, and spent much of her life in New Orleans. I love crawfish.
